These vast quarries first opened at the beginning of the 19th century to exploit chalk mines; since that time their cool, damp walls have housed mushroom growers as well as the largest brewery in Paris, which stored barrels of beer in vast underground caverns.
Since 1997, Les Crayères des Montquartiers have brought this historical site back to life, transforming it to accommodate a variety of new activities: wine storage and inventory for professionals and private wine collectors, event planning and organization in its majestic vaulted arcades, weekday lunch service in its baroque-style restaurant, and guided wine-tasting tours at the Basque Tavern and boutique, where visitors can purchase gourmet regional specialities.
